Erythrol is a sweetener (E968). Erythrol and Erythritol are the replacement names for the same product. It is a sweetener that belongs to the group of polyhydric or sugar alcohols. It is obtained by fermenting glucose with yeast. Erythrol is naturally found in some fruits, seaweed and red wine. This substance contains negligible amounts of calories and almost zero glycemic index. When consumed, it leaves a soft feeling in the mouth.
1g of erythritol is only about 0.2 kcal, which is why it is called "calorie-free sweetener". Among the sweeteners present, it is the least caloric option, which has virtually no nutritional value, so it is ideal for people controlling calories and on reduction. Erythrol is not metabolized by our body, because we do not have an enzyme that would break it down in our body. It is almost completely eliminated and does not affect the intestinal bacterial flora at all. It should not be used by children under 3 years of age due to the not fully developed digestive system, after which it has no contraindications and side effects.
In food, erytrol is increasingly used in the production of healthy sweets, jams, candied fruit, chewing gums and the production of dietary supplements for people who need to exclude sugar from their diet. It not only plays the role of a sweetener, it is also used as a flavor enhancer, in thickening and as a substance that prevents the product from changing its consistency, color and taste.
Erythritol has a positive effect on our body by acting as an antioxidant and protecting teeth. As an antioxidant, it combines with free radicals and protects our body against their harmful effects. It also has the ability to inhibit sugar fermentation, which occurs through bacteria of the genus Streptococcus, which can cause cavities in the teeth.

In the recipes, replacing sugar with erythritol we should use the proportion: 5g of sugar should be replaced with about 7g of erythritol.
The use of erytrole for baking yeast cakes is not recommended because it slows down the rise of dough. It is often added to other sweeteners, such as aspartame, to reduce unwanted aftertaste and improve sweet taste. In cosmetics, it is used as a substitute for glycerin, which acts as a preservative, i.e. protects the product against deterioration.
