Erytrol and Erythritol are interchangeable names of the same product. It is a sweetener that belongs to the group of polyhydroxy or sugar alcohols. Erythritol is found naturally in fruits such as melons, pears, and grapes, and in corn, seaweed, lichen, and red wine. In industry, it is obtained by fermentation, the same process as in cheese production, but fruit is used instead of milk. Another method of obtaining is the use of glucose and various species of yeast or glycerol, also with the use of microorganisms, in this case Yarrowia lipolitica.
It can be used as a replacement for traditional sugar that closely resembles its appearance. It is perfect for sweetening coffee, tea, desserts and as an ingredient in cakes. Erythritol, however, is less sweeter, it has about 60-70% of the sweetness of sucrose (sugar), which is worth considering in recipes when replacing these products. When eaten, it leaves the mouth feeling slightly cool. Its significant advantage over sugar is mainly its low calorie content and the fact that it has a zero glycemic index, and thus does not raise blood glucose levels. 1g of erythritol is only about 0.2 kcal, which is why it is called a "calorie-free sweetener". Among the available sweeteners, this is the least calorie option, with practically no nutritional value, so it is ideal for people controlling weight. Erythrol is not metabolized by our body because we do not have an enzyme to break it down. It is almost entirely excreted and it does not affect the intestinal flora at all. It should not be used by children under 3 years of age due to the incompletely developed digestive system, and it has no contraindications and side effects.

HOW TO USE:
Use in the same way as regular sugar.
In recipes, replacing sugar with erythritol, we should use the following proportion: change 5g of sugar to about 7g of erythritol to maintain the same sweetness. It is not recommended to use erythritol for baking yeast cakes because it slows down the rising of the dough.
