Xylitol is naturally found in raspberries, strawberries, plums and even cauliflower. Finnish xylitol is xylitol derived from birch. The term xylitol itself may refer to other fruits and vegetables - then it is most often produced from corn. There are different methods of obtaining xylitol from plants. Birch is produced by fermentation carried out by bacteria and yeast. On the other hand, the one from maize is produced by the hydrolysis of biomass.
Xylitol, which looks like sugar and even has a similar sweetness, differs in particular in its caloric content. Its calorific value is much lower, even up to 40%. 1 gram is just 2.4 calories. Its glycemic index is only 8, for comparison, traditional sucrose is 70, and glucose is 100! Thanks to this, xylitol does not raise our blood sugar levels as much as traditional sugar. Therefore, it works well as a sugar substitute for people who should exclude products with a high glycemic index in their diet and do not want to give up sweetening coffee, tea or sweet snacks and cakes.
In food, xylitol is most commonly found in chewing gums and candies. It is used as a sugar substitute in healthy versions of sweets and cakes. Perfect for sweetening coffee, tea, smoothies, desserts and ice cream. It is resistant to high temperatures, so we can safely convert sugar in recipes to xylitol.
The presence of xylitol in gums is not accidental. When consuming xylitol, it does not ferment with bacteria, and thus no acids are produced that have a negative effect on the enamel. It also reduces the pH of the oral cavity and increases saliva production, which has a positive effect on the condition of our teeth. Xylitol also facilitates the absorption of calcium, so it is worthwhile for people who suffer from deficiencies to include it in their diet. However, it has one disadvantage, if consumed too much, it can cause laxation, so it is worth controlling the amount consumed during the day.

When replacing sugar in recipes with xylitol, we add it in the same amount as traditional sugar, because its sweetness is similar to each other.
