It has the appearance and sweetness of regular sugar, but contains 40% less calories. In addition, it has a very low glycemic index IG = 8, so it does not cause spikes in blood sugar and insulin levels. 1 gram is only 2.4 calories, so it will work well as a sugar replacement for people who should exclude products with a high glycemic index in their diet, and do not want to give up sweetening coffee, tea or sweet snacks and cakes.
